1 Large ‘Organic’ Red Bell Pepper
6 Small Zucchini (consistency better then large)
3 TBSP Extra Virgin Olive Oil – Cold Pressed
2 TBSP Fresh Lemon Juice
2 TBSP Cumin
1 TSP Fleur De Sal or Celtic Sea Salt
½ Cup Tahini
1 TSP Paprika
Garlic – 2 Cloves Chopped
STEP 1: Wash, rinse, de-seed and chop your red pepper and place into your blender.
STEP 2: Peel your zucchini’s, cube and also put into your blender. Now pulse together until slightly blended (try not to over-blend at this point)
STEP 3: Add olive oil, lemon juice, garlic and tahini. Again – blend lightly.
FINAL STEP: Finish by adding the cumin and salt. Blend on high for about 10 seconds and your ready to pour into a serving dish - sprinkle top with paprika and refrigerate until you are ready to serve. If the mixture is too thick just add a little water or add more Tahini if it’s too thin.
Kafe’s Food for Thought: To spice it up a bit - try adding a pinch of cardamom, turmeric, allspice, chile peppers or chili pepper powder, cinnamon. Remember to set aside a small portion to test different flavors instead of the whole batch!
