Tumeric Veggie Dip

Serves 6-8


This is a deliciously unusual, healthy dip-twist compared to the usual veggie dips out in market. Turmeric is a very potent anti-inflammatory and antioxidant.

What an appetizing way to enjoy these super healthy benefits wrapped up in this yummy, easy to prepare dip!


Ingredients

1 tsp ground tumeric powder

2 tbsp olive oil

1 mini cucumber - grated

1 cup vegan plain yogurt

1 tsp chopped garlic or minced (1 clove)

1 tbsp chopped fresh mint

1 tsp fresh ginger - minced

1/2 tsp lemon zest

Salt & Pepper to taste


Instructions

Step 1: Tumeric Roux

Heat your oil and tumeric spice in a saucepan over medium-low heat, stirring constantly until it begins to bubble up. (usually takes 2-3 minutes) Remove from heat and let cool. (do not burn or you will have to start over) Once cooled, scrape into a mixing bowl and set aside.


Step 2: Cucumber

Coarsely shred cucumber with a box grater...same size as shredded cheese. Next, squeeze out the moisture from your shredded cucumber and add it to your tumeric roux that you set aside in step 1.

Step 3: MIX

Add remaining ingredients and mix well

That's it! Serve with your fav veggies
